dealing with economy inflation in server

i am running a paper 1.21.11 with basic economy from essentialsX and my players has entered a sort of farming economy of just making a ton of everything and selling for however much they can. trying to adjust prices manually doesnt do too much, so i wanted to try dynamic pricing - like if someone sells too much of an item then it becomes less valuable or even unsellable for a time, that way the farms are mostly used to make items and less about printing money.
i guess we could also try and create a sink for players to spend more of their economy into the server and take away some of the money out of the system but i think they are still making infinitly more then they need.
(and if i just make all the sinks and shop prices too high then new players cant enjoy them)
anyone got some tips to deal with that?

btw, i was trying to setup dynamicsShop but it seems to be discontinued, is there an alternative i should try?

edit:

i have installed EzShops (https://modrinth.com/plugin/ezshops) and it works pretty well, but some of the categories are a bit OP (mob spawners, enchanting books, valuables - like trial key or notch gapples)
so i would like to block them for regular users and only allow VIP\staff to use those
any one know if and how can i do that?
