Core ultra cpus

Are the core ultra cpus good for running a heavily modded server with? I think I can find used 245kf or 265f for fairly cheap, would that be a better purchase than say a ryzen 5700 or ryzen 7700? The only thing concerning me atm is the price of DDDR 5
