how do you keep track and manage the updates of plugins, proxys and paper?

im making a server with 0 experience or knowledge, after days of cursing and screaming i finally managed to make velocity works, so now i currently have the proxy, a hub with 2 plugins (viaversion/backwards) and 3 other servers that i dont have much ideas on what to make them into, so i was wondering, how would i keep track and manage the updates of each server? cause i think there should be a better way than manually replacing stuff for each server everytime a new mc version drops, id also like other kinds of tips since as stated earlier, know nearly nothing of what im doing
