How to self host through headless debian?

Hi everyone, I won't lie to you, I am inexperienced and don't know anything about Linux and stuff, but I am more than happy to learn. Here is what I want to do:

I have a HP laptop (intel core i7-7700HQ CPU 2.80GHz; 16gb ram) that I would love to transform into a minecraft server self host for me and a good group of friends (let's say something between 10-15). I already have a server that I host through Bloom (26$/month), but I'm looking to have a free alternative that still works (I'm on paper with some plugins already set up and everything).

I have researched quite a bit and I've learned that it's better to do it on headless debian, which I have no idea what it means, but I want that lol.

I have a PC that could be used to monitor everything, like I've learned that it's possible for me to control my server laptop from another PC, and I'd like that to happen. I've heard about crafty controller and from what I understand, it's to help visualize the things I can do, but I'd love some insight on that as well.

Ideally, it would stay running 24h/7, so any ideas about cooling and stuff? Also, for security, what would be best to avoid cyber attacks?
