Pc acquired, now just trying to plan out my final choices before jumping into making my server

So I was able to get a pc with an I5 12500, 8gb ram (swapping for my own 16gb) and a 256gb nvme

My main goal is doing a heavy or plentiful modpack (probably around 300-400 mods) on Java for 5 friends max on at the same time, that I can have running 24/7 for whenever we wanna play

This is my first server hosting anything myself, I've been doing a lot of research before hand and still had some topics like OS, docker, amp/crafty, etc. I wanted advice on so I can do more research and then start getting to work

First was should 256gb nvme be fine for starting out? Or look for a 500gb-1tb nvme/ just get a hard drive for more storage for backing it up and other applications in the future, not familiar with server size usually

Second, I had recommendations for Debian or Ubuntu previously and after looking into both I was planning to do it on Ubuntu server for my OS but looking more into guides and reading, would it be worth me doing Proxmox instead and setting up a VM of Ubuntu, since I plan on possibly adding other applications like immich, or jellyfin?

Or would Ubuntu with docker be a better option, I've read that security wise Proxmox is great and since it's vms if you mess up you can just kill and start over

(I saw some stuff about casaOS or zimaOS too but unsure about them at all)
Seeing all these different posts and guides about which way to go just makes me unsure what fits my needs best

And then there's amp vs crafty, Ive read that crafty is better for heavy modpacks and overall just more up to date than amp for Minecraft now days so was leaning more towards crafty
And had planned to use playit for external connection, I am not familiar enough or confident for port forwarding and tailscale seemed overkill for 1 small friends server
