Self hosting and setting up minecraft server help

hello I want to self host a minecraft server for a smaller community that I have. I was paying $60USD a month to have a VPS server but I had a spare pc that I was building for another project that fell through. The pc specs are Ryzen 9700x, 128gb 6400 speed RAM, 2tb nvme ssd. I have software called AMP that I bought on impulse and my ISP allows me to port forward, but when trying to do it I couldnt get people to even see the server ip. Ive been told port forwarding has better connection than usijg tunnels services like playit.gg. I would like to keep my personal IP hidden, and Installed Proxmox on the pc to try and make it more secure and to maybe use the pc for more than just a few minecraft servers, but dont know how to use it. I really am just lost atp, and a big time beginner when It comes to all this and need help, anything would be appreciated!
