Why is Azure not ideal for running a server?

I was looking into different hosts for a modded Minecraft server and the general consensus is that Azure and AWS are not great. Could someone explain the more technical side of why that is? I see it has something to do with cores and clock speeds but cant find a specific answer. Thanks!
